Our Shoyu Shiitakes are a Japanese-inspired condiment built around one idea: tender cultivated shiitake deserve a marinade as considered as the mushroom itself. We slow-marinate ours in a hand-mixed blend of tamari, mirin, rice vinegar, and sesame oil, with fresh garlic and ginger for lift. Every jar is cooked and hand-packed in small batches out of our Vancouver Island kitchen.
The result is a savoury, umami-forward condiment that reads as elevated rather than fussy — equally at home anchoring a charcuterie board, folded into a grain bowl, or served straight from the jar on top of a stir fry.
Hardwood sawdust, legume hulls, whole oats & white millet.
